Blueberry French Toast with Nata

HEY ALL YOU COOL CATS AND KITTENS 😺 Here’s my French Toast recipe with blueberry sauce and nata. If you can’t find nata, no worries, you can use Mascarpone cheese instead 😻 

Recipe is for 2 very hungry kittens, but you can adjust as needed. Start with the blueberry sauce, and while that’s cooking, make the toast.

FRENCH TOAST:

Brioche, 4 – 1.5 inch thick slices

2 eggs

1/4 cup milk

1 Tbsp ground cinnamon

4 Tbsp brown sugar (half mix, half rub)

1 tsp vanilla extract

Dash of kosher salt

Coconut oil & butter for cooking

In a shallow plate/bowl, mix the eggs, milk, cinnamon, 2 tbsp brown sugar, vanilla extract and dash of salt.

Warm up a non-stick/cast iron skillet over low medium heat. Dip the brioche slices in the mixture, making sure both sides soak up as much batter as possible. Now, here’s my little secret, I like to sprinkle – more like rub- brown sugar on one side and cook that side first in coconut oil and butter. Then, rub more brown sugar on the other side and flip over. Cook each side for about 2-3 minutes or until golden brown.

BLUEBERRY SAUCE:

2 cups or 1 pack of blueberries (washed)

1 cup of water

2 tbsp brown sugar

1 tsp vanilla extract

1 cinnamon stick

Mix all ingredients in a small pot over medium heat, simmer for 10 minutes. Remove about 3 tbsp of blueberries, set aside. Lower heat to low medium and reduce by half, this will take another 10-15 minutes. Once you get a thick consistency, add the blueberries back in the pot and cook for another minute. Your sauce is ready 😬

Plate your toast, dust with confectioners sugar, top with 1-2 spoonfuls of nata or Mascarpone and pour lots of the blueberry sauce on top 🙌 Serve with maple syrup on the side. Believe me, it’s not sugar overload, the sweetness of the maple syrup will give a nice contrast to the tartness of the blueberries and the creaminess of the nata/mascarpone cheese. ENJOY!
