Cauliflower Crust Pizza

Cauliflower Crust Pizza is life changing 🙌 #RealTalk This is one of the easiest and most delicious pizzas I’ve made at home – and it’s low carb, fam! It’s a triple winner recipe. Healthy, easy and delicious!

INGREDIENTS: ⁠

1 head cauliflower⁠

1 large egg⁠

1 cup mozzarella cheese, shredded⁠

½ cup parmesan cheese, freshly grated⁠

Salt & Pepper⁠

DIRECTIONS:⁠

1️⃣ Preheat oven to 425F. In a large skillet or pot, bring water to a boil – enough water to cover cauli florets. Season water with salt. Roughly chop cauliflower in even pieces and add to the water in one even layer. Cook for 3 minutes until crisp-tender. Transfer to a dish with paper towel and squeeze to drain water. ⁠

2️⃣ Add drained cauli to food processor and pulse until grated. You may need to work in batches depending on the size of your food processor. You want to get a cauliflower-rice-like texture, not a paste. Drain excess water in paper towel and squeeze hard! You want to dry out the cauliflower as much as possible. ⁠

3️⃣ Transfer cauli to a large bowl, add egg, mozzarella, parmesan and season with salt & pepper. Be mindful that parm cheese tends to be salty. ⁠

4️⃣ Line up a baking sheet with parchment paper and grease it (oil or butter, your choice). Pat cauli into a crust about ½ inch thick, that’s what I did and it held wonderfully – It’s up to you if you prefer a thinner or thicker crust. Bake until golden brown, about 20 minutes. VOILA your crust is ready! ⁠

5️⃣ Top with marinara, mozz and your choice of toppings. Bake for another 10-15 minutes or until cheese melts. I made a killer half & half combo 🍕 Half pepperoni and feta. Half grape tomatoes, fresh mozz, fresh basil and balsamic glaze. Grated fresh parm on top. ENJOY!⁠
