Coconut Vanilla Yogurt Ice Cream

It’s summer! It’s hot AF! We trynna look good at the beach, AM I RIGHT? I know… we also want snacks! Here’s a delicious recipe to cool down during this hot summer 🥵 Coconut Vanilla Yogurt Ice Cream 🍦 Super easy to make and low-cal 👊 Serve it on grilled pineapple, drizzle maple syrup on top and we have the perfect summer dessert! ⁠

INGREDIENTS: ⁠

1 cup plain Greek yogurt (I used low fat but more fat the creamier)⁠

¼ cup coconut cream⁠

2 tbsp maple syrup⁠

½ tsp vanilla extract ⁠

Pinch of salt ⁠

PREPARATION:

1️⃣ Using a mixer, whip all ingredients in a bowl until mixture peaks. The peaks will not be super stiff, you’ll have smooth peaks. ⁠

2️⃣ Using a spatula, scrape down sides and bottom and give the mixture a quick mix. Pour into a freezer friendly container, cover and let chill for a minimum of 3 hours.⁠

3️⃣ Your yogurt ice cream is ready! Let it thaw for a few minutes, this will make it easy to scoop. You can use an ice cream scoop and a spoon to help form not-so-perfect ice cream balls. ⁠

Disclosure: It won’t be as “easy” to scoop as regular ice cream (as the mixture wasn’t churned and we didn’t add heavy creams, which adds creaminess, but it also adds lots of fat – so that’s that!) This ice cream is delicious once it starts to soften up, it’s creamy and has lots of texture. ENJOY! ⁠#onehungrychica
