Huevos a la cuarentena! This Huevos Rancheros recipe is simple but has different components. Prepare all the ingredients first and then layer away! I am not including exact quantities, just follow your ❤️ and TASTE your food as you cook 👩🏻🍳
1️⃣ Pico de Gallo: Combine diced tomatoes, red onions, minced garlic, sliced jalapeño, chopped cilantro, lime juice, olive oil, salt and pepper. Set aside. .
2️⃣ Spicy or mild sausage/chorizo: On a medium pan or cast iron pan over medium heat, pour a little olive oil and cook spicy/mild chorizo without casing, season with salt and pepper. Transfer to a small pot or oven friendly dish. Keep warm in the oven at 300F while you cook the other ingredients.
3️⃣ Using the same pan, sauté in olive oil: Diced onion, tomato, red pepper, minced garlic, and green onion. Soften the veggies for a few minutes and add canned beans (I used black beans but you can use pinto or whatever bean you like), add ground cumin, sazon (if available), chicken or beef stock, season with salt and pepper. Reduce for a few minutes and taste to adjust seasoning.
4️⃣ Tortilla: Cover it with aluminum foil and throw it in the oven next to the chorizo at 300F while you fry the egg(s).
5️⃣ Fry egg(s) 🍳
SHOWTIME‼️ Plate from bottom to top: Tortilla, beans, chorizo, cotija or feta cheese, egg(s), pico de gallo. This deliciousness can be served with sour cream and/or guac on the side.
