Pandemic Banana Bread

If by now you haven’t made banana bread, then you’ve been quarantining wrong! Here’s my Pandemic Banana Bread recipe 👇 I added walnuts, maple pecans and a whole banana on top cuz why tf not!

INGREDIENTS ⁠

½ cup of butter, softened ⁠

1 cup granulated sugar ⁠

2 eggs ⁠

4 bananas, ripe (3 crushed and 1 for top) ⁠

1 ½ cups of all purpose flour ⁠

1 tsp baking soda ⁠

½ tsp salt ⁠

½ tsp vanilla extract ⁠

1/2 cup of walnuts, chopped (optional) ⁠

1/4 cup of pecans, whole ⁠

¼ cup of maple syrup or simple syrup ⁠

DIRECTIONS ⁠

1️⃣ Preheat oven to 350F. Cream together butter and sugar. ⁠

2️⃣ Add eggs, vanilla and crushed bananas. Big boy & big girl decisions: You can choose to add 4 crushed bananas and make this a delicious extra sweet banana bread OR add 3 crushed bananas and keep 1 for a fun garnish later. Whatever you do, it’s your business but please combine well. ⁠

3️⃣ Sift together flour, baking soda and salt. Add to the creamed mixture. Combine well but do not overmix. Using a spatula fold in chopped walnuts. ⁠

4️⃣ Pour into greased baking dish. In a small bowl, combine pecans with maple syrup and place them on top of the batter. If you opted to put the whole banana on top, this is the moment for that. Push it down gently, but be mindful that it will sink in a little while baking. You can also slice the banana in half length-wise or in small circles. Pour a little bit of syrup on top of the banana and bake for 55 minutes. ⁠

5️⃣ Check on it, you can cover the top with foil paper if it gets golden brown too fast. You can do the good ol’ knife trick: if it comes out clean, it’s time to eat! ENJOY! It keeps well refrigerated 😊
