Shakshuka with Feta & Sausage

Time to take off the night pajamas and put on the day pajamas! Here’s another quarantine meal inspiration from yours truly ❤️ Easy and delicious Shakshuka recipe with feta and sausage. 

INGREDIENTS:

3-4 eggs

1 can whole plum tomatoes with juice⁠

1/2 cup onion, julienne (thinly sliced)⁠

3-4 cloves of garlic, minced⁠

1/2 cup  bell pepper, julienne⁠

1 cup sausage without casing, mild or hot⁠

1/2 cup olives, Kalamata⁠

1/2 jalapeño, sliced (optional)⁠

What you heart desires of Feta cheese⁠

1 tsp ground cumin⁠

1 tsp ground Paprika⁠

1/2 tsp ground Cayenne ⁠

1 tsp brown sugar⁠

Kosher Salt⁠

Freshly ground black pepper⁠

Olive Oil⁠

Scallions, for garnish⁠

Bread for serving⁠

DIRECTIONS:⁠

1️⃣ Heat oven to 375F degrees. Heat oil in a large skillet or cast iron over medium-low. Add onion, garlic, bell pepper, jalapeño season with salt & pepper. Cook until soft for about 8 minutes. Remove veggies from the skillet and keep them in a separate plate. I like to do this to prevent veggies of getting overcooked and mushy.⁠

2️⃣ Add Sausage into the skillet and cook for about 3 to 5 minutes. Pour in tomatoes, season with salt and pepper; add cumin, paprika, cayenne pepper and brown sugar. Let simmer for about 10 minutes until the sauce thickens. I like to gently break a few of the tomatoes to get all that flavor in the sauce. Taste to adjust seasoning if needed.⁠

3️⃣ Add veggies back in the skillet and gently crack eggs into the skillet over tomatoes. Season eggs with salt and pepper. Add chunks of feta cheese and olives. Transfer skillet to oven and bake until eggs are set, about 7 to 10 minutes. Garnish with scallions and serve with bread. ENJOY!
