1/2 teaspoon of minced garlic
Chili powder
Cotija cheese, crumbled
Fresh cilantro, chopped
3-5 ears of Corn (in the husk)
Salt and Pepper
DIRECTIONS:
1. Preheat oven to 400 degrees F.
2. In a small bowl, combine mayonnaise, garlic and lime juice. Season with salt and pepper; set aside.
3. Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes.
4. Peel down husks and spread with creamy sauce.
5. Garnish with cotija cheese, chili powder and cilantro. Serve immediately and ENJOY!
Life Hack: You can use the husk (after cooking the corn!) as a cob holder by tying it with twine. Cute and simple!
