Eating healthy has never felt this good! Lately, I’ve been trying new low-carb recipes and I’m loving it! ❤️ Using my cast iron grill pan, I grilled a skinless piece of chicken breast and brushed it with Skinny Latina Mango-Apricot BBQ sauce 🔥 served with delicious watermelon salad 🍉

INGREDIENTS:
Watermelon, cut into 1-inch cubes
Feta cheese chunks, you want a creamy feta cheese- believe me dry feta crumbs don’t compare
Mint leaves, roughly tear the leaves with your hands
Kosher salt
Fresh ground pepper
Chili pepper flakes (optional)
Maple syrup
Olive oil
PREPARATION:
Put watermelon in a bowl or plate, season with salt and pepper(s). Drizzle maple syrup and olive oil on top and mix well, making sure to coat all cubes in the dressing. Add feta and mint leaves, mix gently. Serve and ENJOY! 💘
