Sin huevos no hay paraíso 😜 Crab Eggs Benny ❤️ These delicious eggs are super easy to make, I bought my lump crab meat @publix, they sell 8 oz containers located at the seafood department. I’m sure you can find delicious fresh crab meat at your local fishery.
INGREDIENTS:
8 oz Lump Crab Meat
1/2 lemon juice
1/4 Red Bell Pepper, diced
Parsley, chopped
Scallions, thinly sliced
Cayenne pepper (optional)
2-4 tbsp Greek Yogurt, plain
Salt
Mix all ingredients to make your crab salad. Season to taste. You can spread this goodness over a toasted bagel, like I did, or an English muffin or piece of toast. Top with a poached egg and Hollandaise sauce (recipe here). ENJOY!
